CROCK POT PORK CHOPS
4 to 6 pork chops
1 box pork Stove Top stuffing
1 can sm. white potatoes
1 can Golden mushroom soup
1 can cream of mushroom soup
1 onion, sliced in rings
Brown pork chops lightly. Salt and pepper to taste. Prepare stuffing as directed on box. Mix the 2 cans of soup together with 1 can of water. Cut potatoes in half. Pour some soup mixture in the bottom of your crock pot. Place a few spoonfuls of stuffing on top of soup mixture. Then place 2 pork chops on top of stuffing. Add a few potatoes and some onions and then pour some soup mixture over the pork chops. Continue in this order until all ingredients are used. Turn on low and let cook 5 to 6 hours. Serve with vegetables and rolls.

If you’re going low fat, you need to be pretty careful with the type of pork you’re using. Pork is leaner than it used to be, but it still contains a good bit of internal fat, so go with loin chops — or use a tenderloin and slice it. I LOVE pork tenderloin… juicy, tender, flavorful, no bones, no gristle, no nasty layer of fat to chew around… so I highly recommend that cut. It’s a little more expensive than chops, but remember that you’re typically paying for the weight of the stuff you’d throw away and not eat (bones/fat) when you buy chops.

This recipe is a little different from many pork recipes. Try it:

1 lb. pork tenderloin, trimmed of any fat and “silver skin”
2 large apples, preferably one red and one green or yellow (I love Galas and Golden Delicious, but Granny Smith are great too)
    1 T. olive oil
1/2 cup to 1 cup white or blush wine, apple juice, or combination
Spice mix: 1 tsp. salt, 3/4 tsp cracked black pepper, 3/4 tsp. cinnamon, 1/2 tsp ginger, and 1/2 tsp cumin
1-2 Tbsp. cornstarch, dissolved in 1/4 cup COLD water

Pour wine or juice into slow cooker; add cornstarch/water mixture and stir well. Slice apples into 8 slices each with a corer/slicer (or the old-fashioned way) and place them into the liquid in the slow cooker. Heat olive oil in a nonstick skillet and brown tenderloin on all sides, then place on top of the apples. (You can skip browning, but it does add a lot of flavor and color appeal, and 1 Tbsp. olive oil isn’t much fat.) Cook on HIGH for about 2 hours, or on LOW for 4. It depends on how powerful your slow cooker is, so check every half-hour. When done, the meat and apples will both be tender, and the liquid will thicken a bit. Serve over rice or fettucine, with steamed sugar snap peas as a side dish. Yum!

Cook it with new red potatoes, onions, and sliced apples.

Brown the chops in the broiler first… just a few mins to drain off the fat. Plus it gives you a chance to add flavor. What cook wouldn’t want that? I’d like to rub the chops with Kosher salt, pepper, paprika, and maybe even onion powder before browning.

Then use any slow cooker pork chop recipe… I’d bake them in a covered baking pan for 4 hours at 250. Be sure to put any seasonings on the pork chops first and to let them rest, covered, for 10 to 15 mins before serving.
